  1. Slice the potatoes, onions and cut in half all the tomatoes.
  2. Drizzle Olive oil into the bottom of a 12″ Dutch Oven. Then cover the bottom of the oven with a layer of the sliced potatoes.
  3. Add a layer of sliced onions
  4. Layer 1/4 of the tomatoes on top of the potatoes and onions. Sprinkle 1/3 of the parmesan cheese drizzle about 1 oz. of olive oil.
  5. Repeat the layering twice.
  6. Add the rest of the tomatoes on the top. Sprinkle 1 oz. of the shredded parmesan
  7. Drizzle about another ounce of olive oil on the top.
  8. Bake at 350 degrees or about 9 hot coals underneath and 15 to 16 hot coals on the top for 45 minutes. After 45 minutes, bring the total count of hot coals on the top to about 20 to 22, (about 450 degrees). Continue baking for about 15 minutes or until some of the tomatoes & potatoes are brown on top.
